Rec Xpress Recipe: KFC Fakeaway

Nothing better than a Healthy KFC Fakeaway – easy to make and a super healthy Friday night “Fakeaway” dinner!


The KFC Zinger
• 400g chicken breast
• 4 tsp Garlic Powder
• 4 tsp Salt & Pepper
• 8 tsp Smoked Paprika
• 120g cornflakes + Seasoning
Add a dash of the following (to your liking)
• Salt
• Garlic powder
• Basil
• Thyme
• Celery salt
• Oregano
• Black pepper
• White pepper
• Paprika
• Mustard powder
• Ginger powder

The KFC Pepper Mayo
• 120g Light Mayo (Hellmanns)
•  Dash of ground pepper
•  4 tsp of lemon juice
• Add 40g of sriracha if you want supercharged sauce

The KFC Finishers
• 4 egg whites
• 8 slices of Low Carb High Fibre bread (Buttercup Country Split) 
• 200g lettuce


Making the KFC Zinger
1.    Cut chicken breast into 100g pieces
2.    Cover in cling wrap and flatten with rolling pin
3.    Coat chicken with garlic powder, salt and pepper and smoked paprika
4.    Mix cornflakes and the listed seasonings then crush to combine
5.    Crack eggs into a large bowl using only egg white
6.    Coat chicken piece in egg white
7.    Cover chicken in crushed cornflake mix ensuring it’s completely coated
8.    Spray lightly with cooking oil and place into air fryer for 15-18 minutes @ 190-200 degrees or in the oven for 20-25 minutes @ 200 degrees
9.    Put toast in with roughly 3-5 minutes of cook time left

Making the KFC Pepper Mayo
1.    Add light mayo to a bowl
2.    Add the ground pepper and lemon juice
3.    Mix it altogether
